Burro Cheese Kitchen: Artisan Grilled Cheese on SoCo

Burro Cheese Kitchen has not only elevated the art of the grilled cheese sandwich, but also the food trailer scene.  Located in the heart of South Congress under the shade of massive oak trees, Burro’s glass-front shipping container is the perfect spot to bring your pup, people watch, or just enjoy the Austin weather.

Burro has been open since last February, but owner Justin Burrow has been perfecting his sandwich combinations for years.  Don’t be fooled by the presentation (and the slightly greasy butcher paper the sandwiches come wrapped in).  With high-quality bread, Balkan burro cheese and thoughtful sauce pairings, this is not where you come for an average grilled cheese sandwich.

On our visit we tried the Via 206, cheddar, gruyere and their signature balsamic apricot fig sauce served on beer bread, and the Waylon & Willie with caramelized onions, pepperoncini, and spicy maple bacon.  For those with more of a sweet tooth, try the Dark Hawaiian – King’s Hawaiian bread, brie, and chocolate sauce.

Burro also offers a build your own menu (including gluten free bread).  With 7 cheeses and 6 sauces from which to choose, everyone can find their own perfect combo.  They also offer a few side items to top off your meal.  The tomato soup was somewhat average, but we couldn’t resist the classic dipping combination.
