La Barbecue, a food truck located in the GoodLife Food Truck Park in East Austin is a barbecue lover’s dream come true. Not only is the food incredible, so is the whole dining experience! La Barbecue was opened in 2012 by LeAnn Mueller and has quickly become one of the best barbecue joints in town. The pit master, John Lewis, was formally at award-winning Franklin Barbecue before moving over to La Barbecue.

The food truck is open Tuesday-Sunday and begins serving at 11:00am. We knew before we went that there would be a bit of a line considering it was a Saturday and the weather was absolutely beautiful. We arrived with coffee in hand at 10:00am, and we were already about 60 people back. Within an hour, the line had grown to well over 300 people. The majority of the crowd brought coolers and chairs to abide by the new trend of tailgating while waiting for barbecue.

Once La Barbecue opened its “doors” they set out a keg full of beer, and the live music started on a small stage set near the picnic tables. Free beer, live music and barbecue? This is the place to be on a Saturday!

It took about an hour and a half before it was our turn to order. The staff at La Barbecue was so friendly and patient while we went back and forth on what to get. We had been salivating over everyone’s food as they walked by, and it was finally our turn to get our hands on the barbecue. It did not disappoint! The brisket was so moist and juicy, the pork ribs fell right off of the bone and the pulled pork was perfectly tender. I’d recommend getting the chipotle slaw and pinto beans. The slaw is relatively spicy, and the beans are the perfect pairing with the meat.

If you go, be sure to get there early because they tend to sell out a couple of hours after they open. If you’re not in line, you won’t get barbecue and believe me, you don’t want to miss it!
