I attended the opening party for We Olive last week, a hybrid store and restaurant at the Hill Country Galleria offering specialty domestic olive oils and vinegars, tasty bites, artisanal wines, and local beers.   The unique combination is a perfect fit for the Galleria, where patrons have been craving an intimate spot to enjoy a bite to eat before a movie or grab a glass of wine after dinner.

We started out the evening with the We Olive Sparkling Wine Cocktail, made with Scharffenberger sparkling brut, and if you can believe it, We Olive’s Basil Olive Oil and Peach Vinegar.  This was one of the tastiest sparkling cocktails I’ve had in a long time.

The bar also offers tastings of a variety of local and California wines.  We especially enjoyed the Tempranillo from Pedernales winery and the “Dead Flowers” Rosé from Yellow City Cellars in Lubbock.

We got to taste a selection of small bites that will soon be featured on the full menu, all made with oils and vinegars found right in the shop.

The store is lined with barrels of artisanal olive oil and vinegars that you can sample while you shop for cooking gadgets and kitchen accessories.  You can also visit the bar for more of an official olive oil tasting.  Our favorites were the Sonoma Smoked Olive Oil and the Blood Orange Balsamic Vinegar.  We Olive’s website even offers recipe suggestions for whichever oils and vinegars you may purchase.

We ended the evening with olive oil ice cream, complete with a drizzle of Organic Mission Extra Virgin Olive Oil and sea salt.

The entire staff at We Olive was extremely friendly and made the experience that much more enjoyable.  I can’t wait to return to try more of their menu options and add to my new olive oil and vinegar collection.
